Vegetable Lasagne

lasagne noodles, uncooked

mozzarella cheese, grated

In medium bowl, mix cottage cheese and eggs until well combined; set aside.
In large bowl, mix spaghetti sauce, mushrooms, eggplant, zucchini, green
pepper,
oregano and pepper until well combined. Set aside.
In an ovenproof baking dish, place 1/3 vegetable sauce mixture; top with 3
noodles. Spread cottage cheese mixture over noodles. Sprinkle with 1/2
mozzarella
cheese. Repeat layers. Top with remaining sauce.
Cover baking dish with foil.. Bake in preheated 350 F (180 C) oven for 50 to
70 minutes or until noodles are tender.
Serves 8
